Gluten-Free Cookie Crust Lemon Pie and Cinnamon Whipped Cream

Gluten-Free Lemon Pie

Serves 6-8

Pre-heat oven to 350 degrees

Pecan Crust

Ingredients:

1 Cup finely ground Gluten-Free Graham Cookies

4-5 Pamela’s shortbread cookies, finely ground in mini processor

2 Tbl coconut flour

2 tsp vanilla extract

5 Tbl melted butter

Method:

To make crust – mix all ingredients together in bowl. Stir until blended.

With your hands, press crust evenly into pie pan and up sides.

Smaller pie plate works best.

Set aside. Do NOT pre-bake.

Don't get left out of the weekend breakfast fun of waffles just because you're not eating gluten products. Try these Homemade Whole Grain Waffles that satisfy everyone (also easy to make substitutions if gluten is not your concern but whole grain is your desire)

Dry Ingredients

1 Cup Pancake mix OR Pamela’s Gluten-Free Pancake and Baking Mix
¼ Cup Fresh Ground Flax Seeds
¼ Cup Coconut Flour

Caramel Apple Smoothie

The Curry Girls have done it again--when you've got a sweet tooth craving, this quick and easy sweet treat will get leave you satisfied AND leave you with time to spare so you can go out and conquer your day.

Ingredients:

1 Apple ~ Green, Pink Lady, Fuji, Honey Crisp ~ lots to choose from

2 Tbl. almond butter

2 dates ~ PITTTED

1 handful spinach

1 tsp vanilla extract

1 tsp cinnamon

Pinch of Celtic Sea Salt

6-8 oz Hazelnut Milk or YOUR favorite alternative milk

5 ice cubes

Ramp Up Your Pesto WIth Ramps

Getting excited about ramp season is soooo 2 years ago. But the fun thing about ramps is that they are gone before you get sick of them. Also their lightly garlicky flavor, their bright green color, and general versatility are a bonus.

If you aren't familiar with ramps, they are a type of wild leek that peek out of the ground in the spring for a very short time. They have a similar flavor to green garlic or garlic scapes so if they don't have ramps where you live, you can substitute with either of those.

At first glance you might think we're pulling a fast one on you—doing some weird mashup of guacamole and pasta—but fear not, this is a winner waiting to happen. Delicious, creamy (with no milk or cream!), and healthy. Makes a great side dish, or top with grilled chicken for a complete meal. Pairs well with grilled chicken, grilled or baked pork chops, baked or sauteed fish, or boiled shrimp.

(Salvadoran Pickled Cabbage)

This recipe, adapted by the US Department of Health and Human Services, is one of an entire cookbook creating heart-healthy versions of beloved Latino recipes.

2 small carrots, grated
1 small onion, sliced
½ teaspoon dried red pepper flakes (optional)
½ teaspoon oregano
1 teaspoon olive oil

Makes 24 small scones (sampled size) or 12-18 medium to larger scones

 

DRY Ingredients:

1 ½ Cups Pamela’s Gluten-free Pancake and Baking flour

¾-1 Cup ground pecans

¼ Cup coconut flour

¼ Cup freshly ground Flax seeds

1 tsp. Baking Powder

1/3 Cup packed Brown Sugar OR 1/2 Cup packed Coconut Sugar 

1 tsp cinnamon

Makes 6 individual ramekins

What you need:

5 oz. bittersweet or semisweet chocolate
10 Tbl. (1 ¼ sticks) Unsalted butter
3 large eggs
3 large egg yolks
1 ½ Cup powdered sugar
½ Cup Gluten-Free flour (we use Pamela’s Artisan flour)

Baking sheet

6 ramekins
