Too many people think quiche is a recipe that is far too difficult for a weeknight or easy meal, but remove the finnicky crust (that can so often just be soggy and doughy anyway) and it becomes simple and delicious for breakfast, brunch, lunch, dinner, you name it.

In Advance:

Butter a 9″ pie plate or quiche dish (This works great doubled!)

1 large Cauliflower or broccoflower/Romanesco head

For Sandwich:

2 slices toasted whole wheat bread or, for gluten-free, Udi’s whole grain brown rice bread

2-for-1 Great Recipes: Veggie Brown Rice Pilaf ~and~ Stuffed Squash

Veggie Brown Rice Pilaf

Great as a side or as a main dish served with other yummy vegetables!

Serves 6-8

Ingredients:

2 Cups cooked: sprouted short grain brown rice OR a wild or ancient rice blend, kasha/buckwheat, brown rice couscous, quinoa, or millet.

1 onion diced

1/2-1 Cup diced carrot

1 Cup broccoli florets and stems diced and blanched

1 Cup English or frozen peas, par cooked and drained — Fava beans are great too!

1-2 small zucchinis diced

2-4 small garlic cloves minced
