A World of Fermentation | Why Miso Matters

Fermentation isn’t something new. Long before fermented “live” foods became all the rage in upscale aisles, our ancestors were hard at work perfecting the process to preserve food. Long winters and short growing seasons made them the masters of invention in using fermentation to extend the availability of the food supply. Across cultures people utilized the process to create and enjoy cheese, wine, and beer. One of the most ancient and healthiest of the fermented foods is miso, みそ or 味噌, which originated in Japan, as early as 14,000 BC in the Neolithic era.

Winter Grapefruit and Pomegranate Chia Pudding

Chia pudding is an easy "feel good" treat that anyone can prepare.  Chia seeds can absorb liquid up to ten times their size which works wonderfully as a natural thickener.  The seeds are combined with coconut milk and topped with fresh winter fruits.  If you are feeling indulgent, add a few shards of chopped chocolate.

Start your day out right with a satisfying meal that won't slow you down and sends you out the door knowing you've begun in a great way.

Makes 6 Cups or more (Dairy Free & Vegan options)

Dry Ingredients:

3½ Cups Rolled Oats, gluten-free (not quick)

½ Cup coconut flour

¼ Cup hazelnut flour, almond flour, or more coconut flour

¼ Cup coarse ground flax, OR 2 Tbsp fresh (optional)

¼ Cup whole chia seeds, OR 2 Tbsp whole, then freshly ground (optional)

Healthy Recipe: Baked Zucchini Sticks

Baked Zucchini Sticks

Skip the deep fryer and gallons of oil to make these crowd-pleasing side snacks. All ages will devour their vegetables and come back for more.

Ingredients:

2 zucchinis, sliced into 1/4-inch sticks

2 Tablespoons Organic Vegenaise or Wildwood garlic Aioli (we prefer the aioli)

3/4 Cup Gluten-Free Panko bread crumbs 

1/2 Cup finely grated Pecorino Romano cheese (Vegan option: use nutritional yeast)

1/4 teaspoon garlic powder

1/4 teaspoon pepper (optional)

Method:

Preheat your oven to 400°

Homemade Nut Milk Recipe

We had never actually made our own nut-milk before, so we were surprised by how easy it was! It tastes so much fresher and CLEAN-er!! The milk will last up to 5 days in a sealed glass jar refrigerated.

Ingredients:

  • 1 Cup nuts (almond, hazelnut, cashews, etc.)
  • 2- 3 Cups water

** You can double the recipe (depending on how much water your blender can hold)

Fig Smoothie Healthy Recipe

Fig Smoothie

The songs of the season talk about bringing us our figgy pudding, but get your delicious figs via a MUCH healthier delivery system...a yummy smoothie! Add spinach and avocado and you've got super powers in a glass!

Ingredients:

1 Cup of fresh or frozen diced figs (4-5)

Handful of spinach (½ -1 Cup loose baby spinach)

½ small avocado

3-pitted dates

1 Tbl Chia seeds

1 Tbl thick coconut cream (SoDelicious)

1 Cup Coconut water

1 Tbl vanilla protein powder

½ tsp vanilla extract
