Quick and Easy Spring Vegetable Soup Recipe

With warm days and cool nights of spring, we are so busy on the farm. It's an exciting time to be working outside and we appreciate the longer days. That does mean making dinner gets to be a little more challenging as we have a longer list of outside things to do and much less time in the kitchen. I love to find recipes that are both tasty and filling, but easy to pull together after a long day of prepping the gardens.

Gluten-Free Black Bean Burgers (Dairy-Free and Vegan Options, Too!)

Dairy-Free and Vegan options

This recipe is also great to make ahead and let flavors meld, and patties can even be frozen to cook later. Use up leftovers (quinoa, rice, beans, veggies, etc) for a new delicious meal!

Ingredients:

1 can black beans drained (black eyed peas or any beans will work)

1 Cup cooked quinoa (leftover rice or a combination of the two grains works also)

1 Cup sautéed caramelized red peppers & onions  (fajita style)

2 minced garlic cloves

Brown Rice Couscous Tabbouleh

​Vegetarian, delicious, bursting with fresh flavors, so good and good for you, tabbouleh, traditionally made with bulgur, gets a couscous twist (or quinoa if you prefer)

Serves 8 more

Ingredients:

1 Cup brown rice couscous, cooked

3 Tbl olive oil (you can always add more)

2 Tbl  fresh mint, minced

1/2 tsp sea salt

1/4-1/3  Cup fresh lemon juice

1-3 cloves minced fresh garlic

1/2 Cup finely chopped spring onions

1/4 Cup minced red onion
