Healthy Recipe: Mexican Street Corn

Mexican Street Corn

Corn just got a whole lot tastier!

serves 4-6

Ingredients

4-6 ears corn, organic and non-GMO

½ Cup finely crumbled cotija or feta cheese, with some saved for topping

2-3 Tablespoons lime, freshly juiced

1-2 Tablespoons garlic aioli (we love Wildwood’s), Vegenaise, or mayonnaise

1 teaspoon garlic powder

¼ teaspoon sweet paprika powder

Butter, to coat

Lime, to garnish

Healthy Recipe: Peach Kale Salad

Peach Kale Salad

Adapted from Chef David LeFevre

Ingredients:

1 peach, grilled or broiled

1/2 bunch kale (pictured is a softer curly kale) dyno or purple kale works great too

Red onion sliced thin, to taste

Burrata, ricotta, or fresh mozzarella cheese cut into pieces

Fresh ground pepper to taste

Method:

Broil or grill your peach for 3 minutes or until nicely brown, not charred.

Sliver the kale and toss with dressing and red onion.

Add the cheese and peaches.

Fresh ground pepper to taste.

Peach Basil Smoothie

The farmer's market is bursting with such bounty these summer days, but even if you are reading this another time of year, frozen fruit can substitute and still be delicious. This smoothie will refresh you on the most sultry days.

Ingredients:

1 Cup fresh or frozen peaches: white, yellow, or donut peaches (nectarines & apricots too!)

½ Cup hemp milk or your favorite alternative milk

1 Cup coconut water or milk

3 dates, pitted

1 scoop vanilla protein powder  ( 1-2 TBL // or hemp seeds)

Healthy Recipe - Summer Salsa!

Summer Salsa

Warm weather wants cool and light eating, so snack to your heart's content on this healthy treat with chips or over grilled entrees.

Ingredients:

3 very ripe tomatoes (Heirloom, Roma, Cherry tomatoes ~ all work great)

3 ripe, but firm tomatoes

¼ Cup red onion

1 green onion chopped

¼ Cup Cilantro, chopped

1 Jalapeno diced, to taste (the seeds are what makes it hot, so removing them adds the flavor but not as much heat) Careful to wash your hands after working with hot peppers

Juice of 1 lime, to taste

Lemon Berry Squares with Strawberry Drizzle

STOP THE PRESSES! This weekend, everyone will be clamoring for sweet treats, especially if, like theses squares of goodness, those treats also feature delicious fresh fruit! Enjoy!

CRUST

Ingredients:

1 Cup gluten-free flour 

½ Cup unsalted butter, room temperature (not melted or too soft)

2 Tbl. Sugar

Method: 

Using a pastry blender, mix thoroughly.

Press into a 9×9 pan. If dough gets sticky while pressing into pan, flour your fingers, it will help.
