Summertime Chilled Tomato Soup With Guacamole

The wonderful thing about the garden season is that you have such a variety of foods that need little done to them to taste wonderful. Try harvesting a few of your favorite veggies, and breaking out the hand blender to make the perfect appetizer or first course. 

If you have never tried cold soups, you are in for a treat. They retain all the robust flavor of the fresh ingredients, and are perfect for an evening meal, with a baguette of crusty bread and some good cheese.

Cauliflower Steak Sandwich Recipe from Curry Girls Kitchen

Don't sit in the corner at a summer barbeque just because you don't eat meat. These hearty grilled vegetarian and (if you choose) gluten-free savory sandwiches will make the carnivores eye you with envy!

Cauliflower Steak Sandwich

Ingredients:

1 large Cauliflower or broccoflower/Romanesco head

2 cloves garlic, minced

Celtic sea salt

Olive oil

For Sandwich:

2 slices toasted whole wheat bread or, for gluten-free, Udi’s whole grain brown rice bread

Basil pesto

Avocado

Here's a Green Hack Even I Was Able to Do

I must admit…I have something of a brown thumb. I keep trying to grow things in my yard, in planters and pots, indoors, outdoors — and every time I get a new plant I can almost hear it scream as it is ushered into its last days. They don’t do anything wrong, these poor little verdant victims, I just don’t have a whole lot of success in the growing department.

Chai Tea Porridge Recipe | Curry Girls Kitchen

A foggy morning had us craving something warm. So we blended two of our favorites Chai Tea and creamy rice cereal. We were all out of Bob’s Red Mill Creamy Rice Farina ~ so we blended sprouted brown rice in our Magic Bullet, and made our own steel cut rice!

Worked perfectly!

Chai Tea Porridge

Ingredients:

1/3 Cup cream rice farina or 1/3 Cup rice that’s been steel cut in the “bullet”

2/3 Cup Chai ~ pre-made tea, strong!

Cinnamon

Dates, chopped

Hazelnut Milk or Almond Milk

Delicious Healthy Avocado Pasta Recipe

At first glance you might think we're pulling a fast one on you—doing some weird mashup of guacamole and pasta—but fear not, this is a winner waiting to happen. Delicious, creamy (with no milk or cream!), and healthy. Makes a great side dish, or top with grilled chicken for a complete meal. Pairs well with grilled chicken, grilled or baked pork chops, baked or sauteed fish, or boiled shrimp.

Prep time: 5 minutes
Cook time: 12 minutes
Servings: 6 - 8

1 medium head cabbage, chopped
2 small carrots, grated
1 small onion, sliced
½ teaspoon dried red pepper flakes (optional)
½ teaspoon oregano
1 teaspoon olive oil
1 teaspoon salt
1 teaspoon brown sugar
¼ cup vinegar
½ cup water

Persimmon Waffles: Gluten-Free Recipe

OH HOW WE LOVE OUR PERSIMMONS!

We had lots of them ripening at the same time. So we froze some for our smoothies and Pegs made waffles with them today.

They tuned out really yummy!

Persimmon Waffles 

Ingredients:

1 ½ Cups Pamela’s Gluten-Free pancake flour, or your favorite G-F pancake/waffle blend

¼ Cup Fresh ground flax seeds (grind in a coffee mill)

¼ Cup coconut four

2 Tbl. Honey

2 Tbl. Pure Maple Syrup

2 eggs
