Healthy Encurtido Salvadoreno

Encurtido Salvadoreño
(Salvadoran Pickled Cabbage)

This recipe, adapted by the US Department of Health and Human Services, is one of an entire cookbook creating heart-healthy versions of beloved Latino recipes.

Ingredients 

1 medium head cabbage, chopped
2 small carrots, grated
1 small onion, sliced
½ teaspoon dried red pepper flakes (optional)
½ teaspoon oregano
1 teaspoon olive oil
1 teaspoon salt
1 teaspoon brown sugar
¼ cup vinegar
½ cup water

Persimmon Waffles: Gluten-Free Recipe

OH HOW WE LOVE OUR PERSIMMONS!

We had lots of them ripening at the same time. So we froze some for our smoothies and Pegs made waffles with them today.

They tuned out really yummy!

Persimmon Waffles 

Ingredients:

1 ½ Cups Pamela’s Gluten-Free pancake flour, or your favorite G-F pancake/waffle blend

¼ Cup Fresh ground flax seeds (grind in a coffee mill)

¼ Cup coconut four

2 Tbl. Honey

2 Tbl. Pure Maple Syrup

2 eggs

Healthy Clam Chowder to Warm Your Heart and Hearth

We are so excited to share this wonderfully delicious hearty clam chowder soup with you! After searching through the many recipe books we settled on adapting Ina Garten’s East Hampton’s Clam Chowder. Her version takes well over an hour, but we were hungry, and needed to adapt for dairy-free and gluten-free. Ours made plenty for 6-8 bowls full and was ready in 30 minutes! Enjoy with a crusty baguette to warm up ever-cooling nights.

Broccoli Soup from Curry Girls Kitchen

Over the summer season, veggies and fruits are ubiquitous at the farmer’s market, grocery store, bodega, and roadside produce stands…but as weather turns toward chillier days and nights, lots of trees and vines are finishing up for the year. Luckily, this is when cruciferous powerhouse broccoli really comes into its prime.
