Warming Healthy Recipe - Natural Pumpkin Soup

Pumpkin soup is an eas, chilly weather dish that anyone can prepare.  This recipe is free from gluten or dairy and can be easily converted to vegetarian/vegan by substituting vegetable stock for chicken stock.  You can also use fresh cubed pumpkin if available at your local market. While this is a clean recipe, your guests will enjoy it just the same.

Curry Girls Homemade Granola

Start your day out right with a satisfying meal that won't slow you down and sends you out the door knowing you've begun in a great way.

Makes 6 Cups or more (Dairy Free & Vegan options)

Dry Ingredients:

3½ Cups Rolled Oats, gluten-free (not quick)

½ Cup coconut flour

¼ Cup hazelnut flour, almond flour, or more coconut flour

¼ Cup coarse ground flax, OR 2 Tbsp fresh (optional)

¼ Cup whole chia seeds, OR 2 Tbsp whole, then freshly ground (optional)

Cauliflower Steak Sandwich Recipe from Curry Girls Kitchen

Don't sit in the corner at a summer barbeque just because you don't eat meat. These hearty grilled vegetarian and (if you choose) gluten-free savory sandwiches will make the carnivores eye you with envy!

Cauliflower Steak Sandwich

Ingredients:

1 large Cauliflower or broccoflower/Romanesco head

2 cloves garlic, minced

Celtic sea salt

Olive oil

For Sandwich:

2 slices toasted whole wheat bread or, for gluten-free, Udi’s whole grain brown rice bread

Basil pesto

Avocado
