Tropical Fruit Salad
- 1/4 Pineapple
- 1/4 Papaya
- 1 Banana
- 2 oz (or a handful) Fresh Coconut Meat
- 1 Tbsp Cacao Nibs
- 1/4 c Walnuts
- 1/2 Orange
Quick and delicious, you can make this simple healthy travel food recipe on the run and eat it later. Chop all of the fruit, squeeze the orange juice and toss the fruit and juice to mix evenly. Top with the rest, and you're done!
Serves 2.
Other delightful additions:
2 Tbsp chopped fresh mint, 1/2 tsp vanilla powder, 1 Tbsp maple syrup, 1 Tbsp lemon or lime juice; and you can substitute berries, apples, avocado, and any other fruits you can think of.
TIP: We chopped all of the fruit (except the banana) in advance, the whole thing, and had enough for three days of breakfast. Bananas turn brown quickly so you want to add those in right before serving, or a few hours before is fine.
