healthy hummus recipe with sliced beets

The weather is warming, fresh veggies are showing up looking for more robust and enticing than their winter's time for fresh and healthy recipes that are easy to make and sure to please. Bring some pizzazz to your dip by adding avocado and cilantro to hummus, then stand back as the stampede begins.


1 can garbanzo beans, drained and rinsed

3-5 small garlic cloves

¼ cup cilantro

½ small avocado

2-4 Tbs olive oil

½ -1 tsp Celtic sea salt (to taste)


  • Place drained and rinsed garbanzo beans into food processor
  • Add garlic, avocado, and cilantro. Blend together for about 1 minute and then scrap down sides of the bowl.
  • Add olive oil and salt, blend for another minute or until the hummus is smooth
  • Taste for seasoning. Add more salt if needed

Optional additions to make other flavorful variations:

Green onions and parsley, roasted red bell peppers, roasted garlic, etc. Experimenting is fun and lots of flavors meld nicely with the base flavor of hummus.
