Healthy Diet: What About Extra Virgin Olive Oil?

The relative paralysis of our arteries for hours after eating fast food and cheesecake may also occur after consuming olive oil. Olive oil was found to have the same impairment to endothelial function as high-fat foods like sausage and egg breakfast sandwiches. Potentially the world’s healthiest way of eating, the Mediterranean diet is based on the traditional foods that were consumed by populations in Italy and Greece throughout history.

The diet emphasizes produce, fish, whole grains, and health fats – encouraging a high intake of fiber, moderate consumption of meats and alcohol, and tons of antioxidants. Followers of this diet will also enjoy meals with their loved ones – cooking as a family, eating as a family, and sharing a glass of red wine after dinner as a family.

Mediterranean Picnic Salad

MEDITERRANEAN Picnic Salad (Serves 8)

Super simple summer entertaining is what it is all about. This dish, brimming with freshness, is the perfect complement or star of the table itself. Great as a side dish, for a BBQ, or easy to bring to a party! Can be prepared ahead of time or arrange just before serving.

INGREDIENTS: 

Use all or parts of the ingredients listed below to size your salad. Choose what you like to make it your own! These are many of our favorite ingredients. Have fun!
