Cauliflower Parsnip Mashed "Potato" Recipe

Parsnip and Cauliflower Mashers 

'Tis the season for root vegetables and shared meals. As you search for recipes to wow your family and friends, stop right here. Our dairy-free gluten-free homemade cauliflower and parsnip mashers. A healthier more nutritionally beneficial take on “mashed potatoes”

Serves 4-6

Ingredients:

2-4 medium parsnips

1 medium to large head cauliflower cut into florets (stems are good too!) Try, for fun, a colorful purple or green or orange cauliflower!

Gluten-Free Chickpea Crepes

Garbanzo Bean or Chickpea Crepes

Wonderfully versatile and they holds up super well! Great for PB & J, tacos, gyros, wraps, you name it!

Makes at least a dozen crepes. Great to cut the recipe in half, works perfect! Or make them all and freeze leftovers!

Ingredients:

1 Cup garbanzo bean flour (aka chickpea flour)

1/2 tsp Celtic sea salt

1 TBL olive oil, coconut oil, plain yogurt, sour cream, or water

3/4 Cup warm water

Coconut oil spray or oil, ghee, or olive oil for skillet.

Gluten-Free Pecan Scones

*Preheat oven: 375 degrees

You'll need: 2 parchment lined cookie sheets

Makes 24 small scones (sampled size) or 12-18 medium to larger scones

 

DRY Ingredients:

1 ½ Cups Pamela’s Gluten-free Pancake and Baking flour

¾-1 Cup ground pecans

¼ Cup coconut flour

¼ Cup freshly ground Flax seeds

1 tsp. Baking Powder

1/3 Cup packed Brown Sugar OR 1/2 Cup packed Coconut Sugar 

1 tsp cinnamon
